Krystal’s nutrition class was exactly what I was looking for and more. My goal in taking her class was to improve on a what I thought was a good diet. I wanted to lose weight and maintain it. I was also concerned about disease as I aged.

I enjoyed Krystal’s nutrition program – it was well-organized and although backed by scientific detail, was easy to understand.

I learned a lot about a Whole-Food Plant-Based (WFPB) diet and Krystal provided guidance on how to get started and items to consider (e.g., the Dirty Dozen and pesticides in produce) when putting together a meal. I enrolled in hopes of controlling my Type 2 diabetes. Combined with intermittent fasting and exercise, I was able to bring down my blood glucose levels to a safe range during the course of the class.

Many in the class were focused on weight loss and they all had made good progress by the end of the course. I was focused on lean muscle mass and Krystal provided advice on getting sufficient protein during strength training. Getting that kind of personalized advice was a big benefit of being in class. I am a pharmacist who advocates for using food and lifestyle as medicine. There is no medication in the world that can promote whole-body wellness the way nutrition and lifestyle can.

I became a pharmacist to help people use the most effective and safest medications. Now, I prevent and reverse diseases with nutrition and lifestyle changes so medications are not needed and can even be stopped (under the close supervision of a healthcare provider).

I (like many health care providers) was taught that diseases like diabetes, high blood pressure, and heart disease were chronic, irreversible diseases that would continue to get worse year by year. Ten years into my career, when I discovered the power of lifestyle medicine, I found out that that just was not true. Many people can reverse their diabetes, high blood pressure and heart disease. The power is not in the medications. For the most part, medications are treating the symptoms, not the root cause of the disease. To treat the root cause, the power is in using diet and lifestyle as medicine.

But I did not always eat healthily...

My diet complete transformed in 2021 when I learned the incredible impact of nutrition on our bodies. I had no idea that food could impact my mood or energy levels. The foods I was eating were poisoning me and I thought I ate a generally "healthy" diet (please note, the above were my favorite foods, not what I ate every day). 

In hind sight, all of my nutrition information came from "prevailing conventional wisdom" and Google.

Now I have read the studies. I have seen the evidence and I know with confidence I am fueling my body with foods that nourish me, energize me, and combat diseases.

Not long ago, my favorite foods included bacon, BBQ ribs, bacon cheese burgers, pork belly, fries, and all things with cheese. I have since eliminated those things from my diet for years now (though cheese slips in from time to time). If you had asked me to "give up" those foods for <<name your price>> I would have laughed and adamantly refused- thinking, "I could NEVER!". Everything changed when I learned the power of food as medicine. Now I choose not to eat those foods because when I say no to them, I am saying yes to a healthier, happier me, my future, and alignment with my values.

The good news is, you do not have eliminate any of your favorite foods complete to enjoy the benefits of a healthy diet.
